- 1 large butternut
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 round of feta
- ¼ cup of Yum Yum Peanut Butter
- Heat the oil in a pan and sauté the onion for a few minutes or until soft and caramelised.
- Remove and place in a bowl.
- Add the chopped spinach, peanut, peanut butter and feta and mix well.
- Spoon into the cavity of one butternut, season well and sandwich with the other half.
- Wrap tightly in foil and braai or bake for 45 minutes or until soft and cooked through.
